The official menu that King Charles III and his guests will eat after the coronation is not yet known. However, three recipes were revealed so that they can be prepared at street parties: rack of lamb with Asian-style marinade, coronation eggplant, and strawberry and ginger trifle.

These dishes were prepared by chefs Ken Hom, Nadiya Hussain, and Adam Handling, respectively.

Intended as a first course, the coronation eggplants are notable for having a Greek yogurt sauce but, especially, for incorporating garlic in the recipe. Why does it stand out? Members of the British crown are not allowed to eat garlic.

Coronation Quiche: Dish for the Grand Luncheon

According to the official account of the Royal Family on Instagram, King Charles III, and Queen Consort Camilla, chose the recipe for the Grand Coronation Luncheons that are expected to be held throughout the country: coronation quiche.

Prepared with spinach, beans, cheese, and tarragon, it was chosen because it can be adapted to different tastes and needs, just by changing some ingredients. In the end, the objective is to share in the community this celebration.

How to make the coronation quiche?

Ingredients:

For the dough:

  • 125 grams of wheat flour
  • 1 pinch of salt
  • 25 grams of cold butter, cut into cubes
  • 25 grams of lard
  • 2 tablespoons of milk

For the filling:

  • 125 milliliters of milk
  • 175 milliliters of cream
  • 2 medium eggs
  • 1 tablespoon chopped tarragon
  • 100 grams of grated cheddar cheese
  • 180 grams of chopped and sautéed spinach
  • 60 grams of cooked soybeans or lima beans
  • Salt and pepper

Preparation:

  • Start with the dough: sift the flour with the salt and place it in a bowl.
  • Add the butter and lard and knead with your fingertips to obtain a sandy texture.
  • Gradually add the milk and mix until all the ingredients are incorporated. Cover the dough with plastic wrap and refrigerate for 30 to 45 minutes.
  • After this time, place the dough on a table dusted with flour and, with a rolling pin, roll out the dough to form a circle a little larger than your tart or quiche pan, and about 5 mm thick.
  • Place the dough in the mold to line it, cover it with plastic wrap, and refrigerate for 30 minutes.
  • Prick the base of the quiche with a fork and cover it with baking paper; place raw beans on top and bake for 15 minutes in a preheated oven at 190°C (375°F).
  • Remove the dough from the oven, remove the beans and the paper, lower the oven temperature to 160°C, and prepare the filling.
  • Whisk the milk with the cream, eggs, and tarragon and season with salt and pepper.
  • Place half of the grated cheese on the dough, followed by the spinach, soybeans, and cream and egg mixture.
  • Sprinkle with the rest of the cheese and bake for 20 to 25 minutes, until the filling is set and the cheese is lightly browned.
  • Serve your crowning quiche with salad or your favorite garnish.
